The Westin Maldives Miriandhoo Resort has announced the appointment of Alberto Burgio as Executive Chef. With over a decade of progressive experience in luxury hotels, fine dining, and high-volume restaurant operations across the UAE, UK, and Italy, Chef Alberto brings a wealth of expertise and a distinctive culinary vision to the resort’s dining operations.
In his new role, Chef Alberto will oversee the culinary offerings and strategy for three signature restaurants: all-day dining Island Kitchen, the vibrant street-food-style Hawker, and the elevated Japanese specialty restaurant The Pearl, as well as bespoke destination dining experiences.

A native of Sicily, Italy, Chef Alberto has built an impressive career leading multicultural teams, developing innovative menus, and delivering exceptional dining experiences while maintaining cost control and operational efficiency. Most recently, as Executive Chef at Amwaj Rotana JBR in Dubai, he directed culinary operations across seven outlets and contributed to the achievement of the Green Key certification from Dubai Sustainable Tourism, a commitment that aligns perfectly with The Westin Maldives’ vision of sustainability and responsible hospitality.
He is drawn to the culinary profession for its fast pace, precision, and the daily responsibility of delivering guest satisfaction, an environment that demands continuous improvement and consistently pushes beyond perceived limits. This marks his first appointment in the Maldives, and he brings genuine enthusiasm for the unique opportunities to connect with nature and fully immerse in the guest experience. When he’s not in the kitchen, Chef Alberto is a passionate footballer who enjoys watching the game.
