Sun Siyam Olhuveli’s Dream Island Expands Its Culinary Landscape with Three New Dining and Entertainment Venues

Sun Siyam Olhuveli has introduced three new ways to eat, sip and celebrate on its Dream Island with the launch of Milano, Olive Bar, and Crust & Flame, three new venues conceptualized by award-winning Studio Sixty7.  Each space brings a modern expression of coastal European inspiration to the Maldives, where island serenity meets refined seaside charm, transforming Dream Island into the resort’s ultimate lifestyle and social hub.

Milano – Italian Soul with a Front-Row Seat to the Kitchen

Milano pays tribute to the timeless ease and generosity of Italian dining, bringing a fresh Italian coastal aesthetic to the shores of Olhuveli. The open kitchen becomes the centrepiece of the experience, inviting guests to linger as chefs knead silken pasta dough, stir slow-cooked sauces, and char wood-fired favourites in full view. It feels relaxed, theatrical, and wonderfully personal, capturing the essence of Italian cooking at its most sincere.

Designed by Studio Sixty7, Milano blends sun-soaked Italian charm with an elegant island mood. A calming olive-green palette flows through arched feature walls, textured off white plaster, soft linen drapery, and sculpted timber furniture. Deep green crittall style glazing frames the space with quiet sophistication, while patterned floors in black, white, and green introduce a subtle graphic rhythm. As daylight moves into evening, woven lights cast a warm glow that turns Milano into an intimate setting for long lunches and romantic dinners. Every element from the greenery that trails through the room to the gentle colour transitions is crafted to create an atmosphere where Italian flair finds a natural harmony with Maldivian soul.

Olive Bar – The Island’s New Entertainment Pulse

At the heart of Dream Island’s energy, Olive Bar redefines family entertainment with nightly rotational performances, from live acoustic acts and cultural showcases to DJ nights that blend modern rhythm with tropical simplicity. Designed to adapt through the day, it transitions from a relaxed daytime lounge to a vibrant social scene after sunset.

The design is an ode to coastal openness, featuring timber shutters, flexible lounge seating, and a rich layering of natural materials that reflect Studio Sixty7’s craftsmanship-driven aesthetic. Oversized greenery softens the space, while soft ambient lighting transforms it into a stage for laughter, connection, and storytelling, the true rhythm of Dream Island life.

Crust & Flame – Casual, Beachside, and Comfort-Forward

Crust & Flame embodies the art of uncomplicated pleasure set with brick-oven pizzas, serving light contemporary bites, and inviting beachside dining that captures the essence of Maldivian embrace. The visual centrepiece is the emerald-and-sage terrazzo pizza oven, shimmering subtly under natural light, its sculptural form commanding attention as chefs prepare artisanal creations.

Muted olive and white tiles, moss-toned upholstery, and dark timber chairs define its relaxed coastal character, evoking the feel of an Italian trattoria by the sea. Every element is designed to connect guests with the moment, toes in the sand, ocean breeze in the air, and the taste of freshly baked perfection.

Reflecting on the design philosophy, Lee McNichol, Co-founder at Studio Sixty7, shared: “We wanted the spaces to feel like a gentle exhale — warm textures, soft light, and touches of laid-back coastal European style that blend effortlessly with the island’s natural beauty.” Fellow Co-founder Jose Rivero continues: “The goal was simple: create venues that feel lived-in, welcoming, and full of soul. Places where guests don’t just dine or watch a show but genuinely feel part of the experience.”

“What we wanted for Dream Island was a place where guests instantly feel the rhythm of island life: easy, social, and full of good energy,” shared by Hassan Adil, General Manager of Sun Siyam Olhuveli. “Milano, Olive Bar, and Crust & Flame each bring their own personality, but together they create a space where people naturally connect, unwind, and enjoy the moment. It’s the spirit of Olhuveli in its most relaxed and playful form.”

The arrival of Milano, Olive Bar, and Crust & Flame signals a new moment for Dream Island, shaping it into a vibrant culinary and social hub where design, flavour, and atmosphere come together effortlessly. It reflects Sun Siyam Olhuveli’s natural evolution into a lifestyle destination, one that blends contemporary style with the genuine warmth of Maldivian hospitality.

With more than twenty bars and restaurants spread across its islands, Sun Siyam Olhuveli continues to offer a world of choice. It remains a destination shaped by creativity, global influences, and the easy joy of island living, staying true to its promise as a paradise of plenty and the home of the Maldivian spirit.
