Patina Maldives, Fari Islands has officially opened its doors, inviting guests to experience KANDU, a new culinary journey that marks a landmark moment for Maldivian gastronomy in luxury hospitality. As the only restaurant in the country dedicated exclusively to contemporary Maldivian cuisine, KANDU reinterprets the Maldives’ rich culinary heritage through a modern, refined lens.

Named after the Dhivehi word for “ocean”, KANDU is conceived as a fluid connection between sea and table. Rather than preserving local cuisine as a static tradition, the restaurant celebrates it as a living, evolving expression of culture, identity, and place.

To create a truly authentic dining experience, the culinary team behind KANDU embarked on an extensive journey across the Maldivian archipelago. Travelling to multiple atolls, they immersed themselves in island communities, learning from home cooks, elders, and artisanal fishermen. Through these encounters, they uncovered regional recipes, ingredients, and techniques that have been passed down through generations yet rarely shared beyond their islands.

At the heart of KANDU is a multi-course menu designed as a culinary voyage across the Maldives. Each course reflects the flavours, traditions, and stories of a particular atoll, showcasing ingredients deeply rooted in island life. Line-caught tuna, coconut, breadfruit, local herbs, and other traditional staples are elevated through contemporary techniques, creating dishes that honour the wisdom of the past while embracing modern culinary innovation.

This philosophy extends beyond the menu. Guided by Patina Maldives’ commitment to conscious luxury, KANDU follows a “Dhivehi Modern Ocean-to-Table” approach, sourcing ingredients directly from local fishermen and within the island whenever possible.

Moving beyond conventional wine pairings, KANDU celebrates Maldivian flavours through a collection of fresh, tropical, and predominantly non-alcoholic beverages. Traditional favourites such as Kopyfaiy, Sai, and Kashikeyo are reimagined with contemporary flair, while innovative cocktails incorporate indigenous ingredients like bilimbi, adding a uniquely local character to every sip.

Beyond the dining experience itself, KANDU reflects Patina Maldives’ commitment to conscious hospitality and meaningful local connection. By working closely with Maldivian fishermen, growers, and producers, the restaurant champions ingredients sourced from across the archipelago, helping preserve traditional knowledge while supporting island communities.
